How Is Cocoa Powder Made?
Short Answer: Cocoa powder is made by roasting cocoa beans, grinding them into cocoa liquor, then pressing out most of the cocoa butter. The remaining cocoa cake is ground into fine powder.
The Manufacturing Process
- Harvesting & Fermentation: Cocoa pods harvested, beans fermented 5-7 days
- Drying: Beans dried to ~7% moisture
- Cleaning: Removal of debris and foreign matter
- Roasting: 120-150°C to develop flavor
- Cracking & Winnowing: Shells removed, nibs extracted
- Grinding: Nibs ground to cocoa liquor (50-55% fat)
- Pressing: Hydraulic press separates cocoa butter from cocoa cake
- Alkalization (Optional): Dutch processing with alkali
- Pulverizing: Cocoa cake ground to fine powder
- Sifting & Packaging: Size standardization and packaging
Natural vs Alkalized Processing
Alkalization occurs before or after pressing, using potassium carbonate to neutralize acidity, darken color, and mellow flavor.
